Grain Free Muffins

If you are looking for a healthier muffin option, they you MUST try these Protein Packed Grain Free muffins!

Gluten free, minimal sugars, lots of protein... A solid snack or part of a meal.

I make a batch of these every week for myself and the kiddos.  The great thing is that you can mix up the mixin's.  The base recipe is the same and then each week you make things interesting!

Ingredients:

6 Eggs  (note: I am not a quiche or egg person, i do NOT taste the egg in these and the consistency is muffin like!)

1/2 cup Coconut oil, Ghee, or Grass Fed Butter ( I often do 1/2 coconut oil and 1/2 ghee)

1/2 cup Coconut Flour

1/4 - 1/3 cup Maple Syrup or Raw Honey

1 tsp Baking Soda

1 tsp Vanilla Extract

Dash Salt

whatever mixins you'd like to add

Directions:

Preheat oven to 350d

Whisk eggs.

Mix whisked eggs with melted coconut oil or ghee or butter with the syrup/honey, and vanilla extract.

Fold in baking soda and coconut flour. Mix through.

Once you add your mixins and fold through the batter (see below), spoon into a muffin tin and pop into the oven. This typically makes 12-15 muffins for me!

Now it is time to get creative! Here are some of my favorites!

Pumpkin Cranberry --- add 1/2 cup of pumpkin puree and dried cranberries to batter and mix in.

Pumpkin Pistachio - add 1/2 cup of pumpkin puree and 1/2 cup of chopped pistachios

Blueberry Walnut - Add 1 cup of fresh or frozen blueberries and 1/2 cup chopped walnuts

Blueberry Lemon - Add 1 cup of fresh or frozen blueberries, 1 juiced lemon,1 tbsp of lemon zest

Pumpkin Chocolate Chip - Add 1/2 cup of pumpkin puree, 1/2 cup of vegan chocolate chips

The combos are endless.

Swap out your nuts/seeds (almonds, pecans, pistachios, walnuts pumpkin seeds, etc.

Switch up the berries (raspberries, blueberries)

Try cinnamon. Really the options are endless!
